Washoku — a UNESCO treasure.
Japanese cuisine, washoku, is built on seasonality, balance and respect for the ingredient. Learning the language and learning the food go hand in hand — every dish carries vocabulary, history and etiquette with it. At Suwan we cook, taste and talk our way through it.
Iconic Dishes
Sushi
寿司
Vinegared rice paired with seafood or vegetables — from everyday conveyor-belt kaiten to painstaking edomae craft.
Ramen
ラーメン
Wheat noodles in rich broth — shoyu, shio, miso or tonkotsu, with a fiercely local style in every region.
Tempura
天ぷら
Seafood and vegetables in a feather-light batter, fried to order and served with dipping sauce or a pinch of salt.
Okonomiyaki
お好み焼き
A savoury griddled pancake — "grilled how you like it" — with Osaka and Hiroshima each claiming the better version.
Bento
弁当
The art of the packed box — rice, protein and vegetables arranged with balance, colour and a little affection.
Matcha & Wagashi
抹茶と和菓子
Stone-ground green tea with delicate seasonal sweets, designed to balance matcha's gentle bitterness.
At the table
- Say いただきます (itadakimasu) before eating and ごちそうさま (gochisousama) after.
- Never stand chopsticks upright in rice, or pass food chopstick-to-chopstick — both echo funeral rites.
- Slurping noodles is welcome — it cools them and signals that you are enjoying the meal.
- Lift small bowls of rice or soup towards you rather than leaning down to the table.
- Pour for others before yourself, and let someone else fill your glass.
